the culinary genius of the operation, joaquin has spent most of his life in the kitchen. his professional experience includes sous chef at Rambutan, chef de cuisine at Ohba, and most recently chef/owner of Brown Bag Lunch Truck. joaquin combines his vast knowledge of flavor and varied techniques to create the unique menu that is smalls.
